WHAT IS FREEZE-DRYING?

Freeze-drying is the world’s most advanced drying technology. Freeze-drying technology removes water from food by using the principle of sublimation, in which water transitions directly from its solid state (ice) to its gaseous state (water vapor) without passing through the liquid state, under low temperature and low pressure conditions

WHAT IS FREEZE-DRYING?

Products enter the drying process in a frozen state. Inside the machine, their moisture content is reduced to as low as 2% through sublimation under low-pressure and low-temperature conditions. Since the products do not transition into a liquid phase during this process, there is no significant deformation such as shrinking or melting. As a result, the shape of the dried products remains almost identical to their fresh form. Foods exposed to high temperatures lose a significant amount of their nutritional and vitamin content, aroma, flavor, and color. In contrast, products dried using the freeze-drying method at low temperatures (~40°C) and under low pressure (~0.5 mbar) preserve their nutritional and vitamin content, aroma, flavor, color, and shape.

HISTORY

liyofil tarihi

The freeze-drying method, also known as lyophilization, was invented in 1906. In its early years, it was used to preserve blood serum and vaccines due to its ability to protect heat-sensitive biological materials. Until the mid-1900s, lyophilization was used exclusively in the pharmaceutical industry. It was later introduced to the food industry, initially providing freeze-dried foods for astronauts in space and military personnel on active duty. As its applications have continued to expand, freeze-dried foods are now widely used as snacks, in breakfast cereals and granolas, ready-made soups and meals, instant coffee, teas and beverages, as natural sweeteners and colorants in confectionery, and across many areas of gastronomy.

WHY CHOOSE US?

NATURAL

NATURAL

The water activity level of freeze-dried foods is reduced to a level (0.2) at which bacteria cannot survive and spoilage does not occur.

For this reason, they contain no additives or preservatives, making them completely natural and long-lasting.

REHYDRATION

REHYDRATION

Thanks to their preserved cellular structure, freeze-dried foods can quickly absorb water and return to their original form.

This allows freeze-dried foods to regain their fresh and natural state, making them suitable for use as ready-to-eat foods.

ALWAYS FRESH

ALWAYS FRESH

Due to their low moisture content (~3%), freeze-dried foods remain fresh for a very long time under proper storage conditions, without the need for any additives or preservatives.

As long as they are protected from direct sunlight and exposure to air, they can have a shelf life of nearly 20 years.

LIGHTWEIGHT

LIGHTWEIGHT

Thanks to their lightweight nature, freeze-dried foods are easy to transport. They are an ideal source of light and healthy nutrition for travel and activities that require long-lasting food.

Without significant loss of shape, their weight is reduced to approximately one-tenth of their fresh state, providing easy transportation and storage.

HEALTHY

HEALTHY

Since they are dried at low temperatures, freeze-dried foods retain up to 97% of their vitamins, antioxidant capacity, and other nutritional values compared to their fresh state.

They preserve their fresh form, aroma, and natural scent, providing a completely organic experience.

UNIQUE

UNIQUE

By transforming familiar foods into a crunchy texture, they offer an extraordinary tasting experience. Imagine, for example, a crispy watermelon.

In this way, they provide a healthy alternative to unhealthy snacks—the perfect healthy snack for children!
